Catfish Mull - cooking recipe

Ingredients
    5 lb. catfish (I prefer filets)
    5 lb. onions
    1 doz. large potatoes
    1 lb. fat back
    salt and pepper to taste
    Tabasco to taste
    1 stick oleo
Preparation
    Fry fat back, preferably in cast-iron pot with lid.
    Remove fat back from pot.
    Put a layer of onions, layer of fish, etc. Lay whole peeled potatoes on top.
    Add seasoning and oleo.
    Put lid on pot; cook until potatoes are done.
    Will serve at least 12 people.
