Zucchini Bread(Skinny Bread) - cooking recipe

Ingredients
    2 1/4 c. sugar
    3 eggs
    1 c. oil
    2 c. grated, unpeeled zucchini
    3 tsp. vanilla
    3 c. flour
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
    1/4 tsp. baking powder
    1 c. dates (optional)
    1 c. nuts (optional)
Preparation
    Grate zucchini on coarse side of grater.
    (May use a bit more than 2 cups of zucchini but not less.)
    Sift dry ingredients into wet mix and stir.
    Bake in 2 greased loaf pans at 325\u00b0 for 1 hour or until done.
