Easy Quiche - cooking recipe

Ingredients
    1 pkg. frozen chopped broccoli, spinach or asparagus spears, cooked and drained
    1 c. dairy sour cream
    1 c. creamed cottage cheese
    1/2 c. Bisquick baking mix
    1/4 c. margarine, melted
    2 eggs
    1 tomato, peeled and thinly sliced
    1/4 c. grated Parmesan cheese
Preparation
    Grease a 9 x 1 1/4-inch pie plate.
    Spread broccoli or spinach or asparagus in plate.
    Beat sour cream, cottage cheese, baking mix, margarine and eggs until smooth (15 seconds in blender on high).
    Pour into plate.
    Top with tomato and sprinkle with Parmesan cheese.
    Bake at 350\u00b0 until knife inserted in center comes out clean (about 40 minutes).
    Cool 5 minutes and serve. Makes 6 to 8 servings.
