Ingredients

1 can beets
1/2 c. vinegar
1/2 c. beet juice
2 Tbsp. sugar
2 cloves
1/2 tsp. salt
3 peppercorns
1/4 bay leaf
1/4 green pepper, chopped
1 small onion, chopped
Preparation

Drain beets, reserving liquid.
Place beets in fruit jar. Combine vinegar and beet juice; bring to a boil.
Add remaining ingredients and heat to boiling.
Pour over beets; cover jar. Serve very cold.
