Zabaglione - cooking recipe
Ingredients

8 egg yolks
3 to 4 Tbsp. sugar
1/2 c. Marsala (sweet or dry)
Preparation

In the top of a double boiler, beat together the yolks, the wine and 3 tablespoons of the sugar.
Place the double boiler over simmering water.
Whip mixture constantly with a wire whisk until it is thick enough to retain a slight peak when the whisk is withdrawn (about 5 minutes cooking time).
Taste for sweetness.
If it is not sweet enough, add the remaining sugar.
Pour into stemmed glasses and serve at once.
