Cuban Fried Rice - cooking recipe

Ingredients
    2 c. (uncooked) rice
    1 lb. sliced baked ham, chopped
    3 stalks scallions, chopped
    4 eggs
    1 can bean sprouts
    1 small can sliced water chestnuts
    1 can baby shrimp or 1/2 lb. shrimp, cooked, cleaned and peeled
    chunks of pork and beef (optional)
    soy sauce
    garlic powder
Preparation
    Cook rice as directed but use olive oil instead of vegetable oil and omit the salt.
    When rice is done, sprinkle soy sauce and toss until rice is brown (lite).
    Drain bean sprouts well; add to rice.
    Add chopped sliced ham, shrimp, (pork), garlic powder and water chestnuts.
    Scramble eggs and fry in butter; add to rice. Top rice with raw scallions.
    Mix and serve.
