Sweet Potato Salad - cooking recipe

Ingredients
    3 lb. sweet potatoes
    1 c. chopped red onion
    1/2 c. chopped green pepper
    1/2 c. chopped red pepper
    1/2 c. olive oil
    2 Tbsp. Dijon mustard
    1 Tbsp. ketchup
    1/4 c. vinegar
    1/4 c. parsley, chopped
    1 Tbsp. minced garlic
    salt and pepper to taste
Preparation
    Cook diced sweet potatoes in boiling water until tender.
    Cool on a cookie sheet (never cool in water).
    Mix olive oil, vinegar, ketchup and mustard in a large bowl.
    Add onion, pepper, potatoes and herbs.
    Serve warm or cold.
