Sicilian Meat Roll - cooking recipe

Ingredients
    2 beaten eggs
    1/2 c. tomato juice
    1 1/2 c. shredded Mozzarella
    3 slices Mozzarella cheese
    salt and pepper to taste
    3/4 c. soft bread crumbs
    8 thin slices boiled ham
    2 Tbsp. parsley
    1/2 tsp. crushed oregano
    1 small clove minced garlic
    2 lb. lean ground beef
Preparation
    Mix beef, eggs, bread crumbs, juice, garlic, parsley, oregano, salt and pepper.
    Put on foil to 12 x 10-inch rectangle.
    Arrange ham on top, then shredded Mozzarella cheese.
    Roll mixture as for jelly roll.
    Wrap in foil.
    Seal edges and ends.
    Place seam side down in greased baking pan.
    Bake at 350\u00b0 for 1 1/4 hours.
    Halve cheese slices and place on top of roll.
    Return to oven until cheese is melted.
    Serves 8.
