Green Tomato Relish - cooking recipe

Ingredients
    24 large green tomatoes
    1/4 c. salt
    9 large onions
    6 green peppers
    3 red peppers
    2 1/2 lb. sugar
    1 1/2 qt. vinegar
    2 Tbsp. whole mixed pickling spice
Preparation
    Put tomatoes through food chopper.
    Add salt and mix.
    Let stand overnight.
    Next day, drain off juice.
    Put onions and peppers through food chopper.
    Add to tomatoes with sugar, vinegar and spice (tied in a bag).
    Cook to boiling point; reduce heat and simmer 3 hours.
    Pour in sterilized jars and seal.
    Makes 8 pints.
