Cold Mashed Potato Soup - cooking recipe
Ingredients

6 c. leftover mashed potatoes
1 1/2 to 2 c. mayonnaise
2 Tbsp. finely cut chives
1/2 c. coarsely crumbled, crisply-cooked bacon
1/4 c. grated onion
3/4 tsp. kosher salt
1/2 tsp. freshly ground white pepper
Preparation

Place the mashed potatoes in a mixing bowl and beat briefly until smooth.
Beat in the mayonnaise; blend thoroughly.
Add the remaining ingredients and mix until completely blended.
You can do the mixing with an electric mixer, set at low.
Serve at room temperature.
