Swedish Apple Coffee Cake - cooking recipe

Ingredients

2 eggs
3 c. sifted flour
1 tsp. soda
1/2 tsp. nutmeg
1 1/2 c. oil
1 c. coconut
2 c. sugar
1 tsp. salt
3 tsp. cinnamon
3 c. diced peeled raw apples
1 tsp. vanilla

Preparation

Beat eggs with sugar.
Then add oil; mix well.
Then add flour, salt, soda, cinnamon, nutmeg and vanilla.
Stir in apple and coconut.
Bake at 325\u00b0 for 1 1/4 hours.
Frost with vanilla glaze when cool.
