7 Week Bran Muffins - cooking recipe
Ingredients

2 c. boiling water
2 c. bran flakes
2 sticks margarine, softened
3 c. sugar or 2 1/4 c. honey
4 eggs
4 c. buttermilk
5 c. flour
5 tsp. baking soda
1 tsp. salt
4 c. all-bran cereal
1 1/2 c. raisins or nuts (optional)
Preparation

In a small bowl, put bran flakes and stir in boiling water. Set aside.
In a huge mixing bowl cream margarine and sugar.
Add eggs and beat until light.
Add buttermilk and soaked bran, stir. Sift together flour, salt and baking soda.
Add to creamed mixture. Add all-bran and raisins/nuts.
Stir just until moistened.
Fill greased, \"Pam-ed\" or paper lined muffin tins 3/4 full.
Bake 18 to 20 minutes.
