Chantilly Potatoes - cooking recipe

Ingredients
    potatoes (enough for 3 c.), cooked and mashed
    1/2 c. heavy cream, whipped stiff
    salt and pepper
    butter
    1/2 c. grated Cheddar cheese
Preparation
    Cook, drain and mash enough potatoes to make 3 cups.
    Season with butter, salt and pepper.
    Shape into a mound on a pie pan. Whip 1/2 cup heavy cream until stiff; season with salt, paprika and a dash of cayenne.
    Fold in 1/2 cup grated Cheddar cheese. Spread on potato mound.
    Bake in preheated moderate oven, 375\u00b0, for about 15 minutes.
    Makes 4 servings.
