Apricot Nut Loaf - cooking recipe

Ingredients
    1 c. sugar
    2 Tbsp. soft shortening
    1 egg
    3/4 c. milk
    3/4 c. orange juice
    1 tsp. grated orange rind (optional)
    3 c. sifted flour or whole wheat flour
    3 1/2 tsp. baking powder
    1 tsp. salt
    1 c. finely chopped dried apricots
    3/4 c. chopped walnuts
Preparation
    Grease a 9 x 5 x 2 1/2-inch loaf pan.
    Mix thoroughly sugar, shortening and egg.
    Stir in milk, orange juice and rind.
    Sift together flour, baking powder and salt.
    Stir in.
    Blend in apricots and nuts.
    Pour into prepared pan.
    Let stand 20 minutes. Bake about 70 minutes at 350\u00b0 until toothpick comes out clean.
