Pork Dijon - cooking recipe

Ingredients
    1 lb. lean pork
    salt, pepper and flour
    2 1/2 Tbsp. margarine
    1/4 c. cider vinegar
    3/4 c. cream
    1/6 c. Dijon mustard
Preparation
    Trim pork; slice into 2-inch wide pieces.
    Flatten with a mallet.
    Coat pork with mix of flour, salt and pepper.
    Fry in 1 1/2 tablespoons margarine.
    Add cider vinegar to pan dregs; cook down.
    Add cream; simmer for 15 minutes.
    Add mustard and remaining 1 tablespoon margarine.
    Cook 2 minutes.
