Zucchini Quiche - cooking recipe

single crust pie shell
2 sliced zucchini
1 c. Swiss cheese, shredded
1/3 c. minced onion
4 eggs
2 c. cream
1/8 tsp. red pepper
3/4 tsp. salt
1/4 tsp. sugar
Preparation

Steam zucchini for 5 minutes. Layer with cheese and onion in pie plate. Slightly beat eggs in cream, red pepper, salt and sugar.
Pour in pie shell and bake 15 minutes. Reduce oven temperature to 300\u00b0. Bake for 30 minutes longer or until firm. Before cutting, let stand 10 minutes.
