Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. canned pumpkin
3/4 c. flour
1 tsp. baking soda
4 Tbsp. softened margarine
1 c. powdered sugar
1/2 tsp. vanilla
1/2 c. chopped walnuts (optional)
Preparation

Cream eggs and 1 cup sugar.
Add 2/3 cup canned pumpkin, 3/4 cup flour and 1 teaspoon baking soda; beat.
Grease and flour jelly roll pan, then pour batter in and bake at 350\u00b0 for 15 minutes.
Let cool for 10 minutes.
Flip out of pan and roll in dish towel; let stand for 45 minutes.
Mix 8 ounces cream cheese, 4 tablespoons softened margarine, 1 cup powdered sugar and 1/2 teaspoon vanilla.
Add walnuts now if desired.
Unroll and spread with cream cheese mixture.
Roll into aluminum foil.
Refrigerate.
