Southern Fried Chicken - cooking recipe

Ingredients
    2 1/2 lb. fryer, cut into pieces
    1 c. flour
    1/2 tsp. pepper
    1 tsp. salt
    1/2 tsp. paprika
Preparation
    Wash chicken pieces and pat dry.
    Mix flour, salt, paprika and pepper.
    Coat chicken with flour mixture.
    Heat 1/2 inch oil in large skillet.
    Cook chicken over medium heat 15 to 20 minutes. Reduce heat; cover tightly and simmer 30 to 40 minutes or until tender.
    Remove cover the last 10 minutes and brown.
