Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 c. sugar
    2 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. salt
    3 eggs
    1 c. oil
    2 tsp. vanilla
    2 c. grated carrots
    2 small apples (peeled, cored and grated)
    1/2 c. chopped nuts
    1 c. raisins
    1/2 c. coconut
Preparation
    Combine together flour, sugar, soda, cinnamon and salt. Beat together
    eggs,
    oil and vanilla.
    Mix together carrots, apples, nuts, raisins and
    coconut.
    Mix
    all
    three
    together just until incorporated
    (don't
    overmix).
    Spoon
    into
    paper muffin cups or greased and
    floured muffin tins.
    Bake at 350\u00b0 for 25 to 30 minutes.
    Makes 24 muffins.
