Bean Sandwich Filling - cooking recipe
Ingredients

5 c. cooked pinto beans
1 c. cubed celery
1/4 c. chopped onion
1/2 c. chopped olives
1/4 c. chopped green or red pepper
2 Tbsp. lemon juice
salt to taste
1/8 tsp. garlic powder
1 Tbsp. fresh chopped or 1/2 tsp. dry basil leaves
Preparation
-
Mash 4 cups cooked pinto beans, leaving 1 cup whole.
Add remaining ingredients and mix well.
Serve as sandwich spread or on lettuce bed as a salad.
