Sweet Potato Hash - cooking recipe
Ingredients

3 1/2 lb. sweet potatoes, peeled and cut into 1-inch cubes
3 qt. water
1 tsp. salt
2 Tbsp. butter or margarine
2 Tbsp. vegetable oil
3 c. chopped onion
1/2 tsp. ground white pepper
Preparation

Cover potatoes, water and salt in a Dutch oven; bring to a boil.
Cover and cook 3 minutes.
Drain immediately, and cover with cold water; drain.
Pat dry, or let stand 15 minutes.
