Ratatouille - cooking recipe

Ingredients
    1 medium eggplant
    2 small zucchini
    1 c. chopped green pepper
    1/2 c. finely chopped onion
    2 medium tomatoes, quartered
    salt and pepper to taste
    1/4 c. oil
    1 clove garlic, crushed
Preparation
    Prepare cubed eggplant.
    Prepare sliced zucchini.
    Cook all ingredients in a 12-inch skillet over medium heat for 10 to 15 minutes, stirring occasionally, until zucchini is tender.
    Serves 6.
