Pork Roast With Apricots - cooking recipe

Ingredients
    1 boneless pork tenderloin
    10 large dried apricots
    1/2 c. minced fresh herbs (oregano, tarragon, thyme and chives)
    3 cloves garlic, minced
    1 c. lightly toasted bread crumbs
    salt and fresh ground pepper to taste
    3 Tbsp. Dijon mustard
Preparation
    Preheat oven to 350\u00b0.
    Trim fat off pork.
    Using a sharpening steel or similar tool, poke a hole through the center of the roast, end to end.
    Insert the apricots into the hole, pushing them in with your fingers.
    This gives you a pretty patch of orange when you slice the roast.
