Sauteed Spinach - cooking recipe

Ingredients
    1 lb. baby spinach
    1/2 Tbsp. extra virgin olive oil
    1 Tbsp. butter
    1/2 Tbsp. freshly minced garlic (optional)
    salt to taste (optional)
Preparation
    Wash spinach and blanch in boiling water for 2 minutes. Remove spinach and place in an ice water bath for 1 minute.
    Drain spinach and squeeze dry.
    Heat olive oil and butter in a saute pan over medium heat.
    Add garlic and spinach and saute 2 to 3 minutes just until garlic is lightly browned and spinach warmed through. Serve immediately.
