Crabmeat Au Gratin - cooking recipe
Ingredients

1 lb. white crabmeat
1 stick butter
2 Tbsp. flour
1 c. green onions, chopped
2 egg yolks, beaten
1 can evaporated milk (10 oz.)
2 tsp. salt
1 tsp. black pepper
1/2 tsp. red pepper
1/2 c. Cheddar cheese
1/2 c. Swiss cheese
Preparation

Melt butter in a large pot.
Add flour and cook until mixture is smooth. Add green onions and cook until tender.
Stir in beaten egg yolks, milk and seasonings. Add cheese and cook on low fire for 5 minutes, stirring constantly.
Stir in crabmeat. Continue cooking on low fire for an additional 5 minutes.
Pour mixture into a large glass baking dish and bake at 350\u00b0 for 15 to 20 minutes.
