Rhubarb Bread - cooking recipe

2 c. all-purpose flour
1 1/4 c. whole-wheat flour
2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt (if desired)
2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. nutmeg
1 egg white
2 whole eggs
1 c. vegetable oil
1 1/4 c. packed dark brown sugar
2 tsp. vanilla
2 1/2 c. diced rhubarb
3/4 c. chopped walnuts
Preparation

In a medium bowl, combine the flours, baking soda, baking powder, salt, cinnamon, allspice and nutmeg.
In a large mixing bowl, combine the egg white, whole eggs, oil, brown sugar and vanilla.
Beat the mixture with an electric mixer on high speed until fluffy.
Stir in the flour mixture until it is just moistened.
Stir in the rhubarb and walnuts.
Divide the batter between 2 greased 9 x 5 x 3-inch loaf pans.
Bake in preheated 350\u00b0 oven for about 50 minutes or until a pick inserted in the center comes out clean.
Set the pans on a rack for 10 minutes, then turn out the loaves to cool completely.
Makes 2 loaves.
