Polenta Chicken Corn Meal Mush - cooking recipe

Ingredients
    2 1/2 lb. chicken, cut up
    1/2 c. butter
    4 Tbsp. olive oil
    1 chopped onion
    2 chopped carrots
    1 chopped piece of celery
    1 small can mushrooms, chopped
    1 c. canned Italian plum tomatoes
    1/2 c. dry white wine
Preparation
    Saute the chicken until golden brown in the butter and oil, about 10 minutes.
    Then add the chopped onion, carrots, celery, mushrooms and cook 5 minutes until the onions are wilted.
    Then add the tomatoes and the wine.
    Bring to a boil; cover and cook over low heat, stirring occasionally.
    When chicken is tender, place on a hot platter.
    Strain sauce; season to taste, heat and pour over chicken.
    May top with fresh mushrooms sauteed in butter and serve with polenta.
    Top with grated cheese.
