Nonfat Gazpacho Dressing(Oil-Free And Nondairy!) - cooking recipe

Ingredients
    1 c. tomato juice
    1 c. diced cucumber, peeled and seeded
    1 minced scallion
    1 medium clove garlic
    a few leaves fresh basil or 1/2 tsp. dried
    1 to 2 Tbsp. fresh or 1 to 2 tsp. dried dill
    a small handful of fresh parsley
    1 to 2 tsp. lemon or lime juice
    salt and pepper to taste
    1 large onion, chopped
    2 medium potatoes, peeled and chopped
    3 c. water
    2 tsp. salt
    1 lb. spinach, cleaned and stemmed
    5 medium cloves garlic, peeled only
    1 1/2 to 2 Tbsp. butter (optional)
    3 Tbsp. flour (optional)
    1 1/2 c. hot milk (may be low-fat)
    white pepper and nutmeg to taste

    Place onion, potatoes, water and salt in a large saucepan. Bring to a boil; cover and simmer until the potatoes are tender. Remove from heat; add spinach and
    garlic cloves and set aside.
