Carrot-Bran Muffins - cooking recipe

Ingredients
    1 1/2 c. whole bran cereal
    1 c. buttermilk
    1 c. flour
    1/4 c. packed brown sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 beaten egg
    2 medium carrots, finely shredded
    3 Tbsp. cooking oil
Preparation
    In bowl, combine bran and buttermilk; let stand about 3 minutes or until liquid is absorbed.
    In mixing bowl, stir together flour, sugar, baking powder, soda and salt.
    Combine cereal-milk mixture, egg, carrot and oil.
    Add all at once to dry ingredients, stirring just until moistened (batter will be thick). Fill greased muffin pans 1/2 full.
    Bake in 400\u00b0 oven for 20 to 25 minutes.
    Makes 12 to 14 muffins.
