Hearty Baked Potato Salad - cooking recipe
Ingredients

8 red salad potatoes
1/2 c. onion, chopped
2 Tbsp. parsley
1 (11 oz.) can Cheddar cheese soup
1/2 c. mayonnaise
1/2 c. plain yogurt
4 oz. bacon, cooked, drained and crumbled
paprika for garnish
Preparation

Peel potatoes; boil until soft.
Cut 1 1/2-inch chunks.
Spread potatoes evenly over bottom of 13 x 9 x 2-inch baking pan.
Combine onions, parsley, soup, mayonnaise and yogurt.
Pour over potatoes. Sprinkle cooked bacon on top.
Garnish with paprika.
Cover with foil and bake at 350\u00b0 for 1 hour, uncovering during last 30 minutes.
Yield:
10 to 12 servings.
