Carol'S Yummy Chicken - cooking recipe
Ingredients

olive oil
1 medium onion
4 cloves garlic, crushed
2 beef bouillon cubes
approximately 1 1/2 lb. chicken breasts, sliced in strips or chunks
salt, pepper, basil and thyme to taste
cooked pasta (your favorite kind)
8 oz. fresh mushrooms, sliced
1 1/2 to 2 red and green peppers, sliced
1/3 to 1/2 c. white wine
1/2 large can Progresso crushed tomatoes
Preparation

Saute onion in olive oil (enough to just cover bottom of large frying pan; electric is best).
When onion is golden or light brown, remove from pan and set aside.
Saute chicken and crushed garlic in olive oil (add more if necessary) for a few minutes, turning once (don't brown).
Add salt, pepper, basil and thyme. When chicken is just about tender, add crushed tomatoes and broken up bouillon cubes and stir until bouillon is melted and mixed with tomatoes.
Add wine and simmer about 5 minutes.
Add the sauteed onions.
Add fresh green and red peppers and mushrooms.
Mix well. Cover for a few minutes only, then mix again.
Don't let the vegetables get too soft.
Serve over pasta with a glass of wine and fresh semolina bread.
