Mama'S Olive Chicken And Rice - cooking recipe

Ingredients
    1 c. white rice
    1 fryer chicken, cut up and skinned if you like
    2 Tbsp. olive oil
    1/4 c. water
    1/2 to 1 c. chopped onion
    1 small jar green olives, chopped
    salt and pepper to taste
Preparation
    Boil rice in salted water for 20 minutes; drain.
    While rice is cooking, put olive oil and water into pressure cooker; add seasoned chicken pieces, layering onion and olives between.
    Cook at pressure 10 for around 15 to 18 minutes.
    When the chicken is cooked, remove from pressure cooker, scraping onions and olives into the pot.
    Add cooked rice to pot, stirring well to mix onion and olives and absorb juices.
    Place chicken on top of rice, replace top of pressure cooker and cook an additional 1 to 2 minutes (before the top becomes locked on) to combine flavors. Then enjoy!
