Potato "Omelet" - cooking recipe
Ingredients

6 medium red or white potatoes
2 tomatoes
1/2 lb. cheese
salt and pepper to taste
8 large spinach leaves
Preparation

Grate potatoes and place in a bowl of cold water.
Butter frying pan.
Take a handful of grated potatoes.
Squeeze out the excess water and spread evenly on the bottom of pan.
Sprinkle a pinch of salt and pepper.
Cover and cook on low heat until potatoes are tender and hold together.
Flip over.
Cover and cook until bottom is golden brown.
Cover omelet with tomato slice and grated cheese.
Let cheese melt, then add spinach leaf.
Serve warm.
