Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. cubed chicken
    1 small onion, chopped
    1 small green pepper, chopped
    1 can corn, drained
    1 c. chicken broth
    1 c. salsa
    1 1/2 c. Minute rice
    1/2 c. shredded cheese
Preparation
    Stir-fry chicken, onion and pepper in oil until chicken is thoroughly cooked.
    Add corn, broth and salsa; bring to a boil. Stir in rice and cover.
    Let stand 5 minutes.
    Fluff with fork. Sprinkle with cheese.
