Pecan Delight Pie - cooking recipe

Ingredients
    4 egg whites at room temperature
    1 c. sugar
    1 tsp. baking powder
    1/4 tsp. vanilla
    2 c. saltine crackers
    3/4 c. chopped pecans
    1 1/2 to 2 c. whipped topping
    1/4 c. chopped pecans
Preparation
    Whip egg whites on medium speed until soft peaks form. Continue whipping on medium speed while gradually adding sugar and baking powder.
    Continue to whip until very stiff peaks form and all sugar is dissolved.
    Add vanilla and mix thoroughly.
    Coarsely break saltines and with 3/4 cup pecans fold by hand into mixture. Pour into a greased 9-inch pie pan and bake at 300\u00b0 for 30 minutes until center is almost firm.
    Do not overbake!!!
    Remove from oven and cool upside down.
    When thoroughly cooled, top with whip topping and sprinkle with 1/4 cup pecans.
