Old-Time Southern Corn Muffins - cooking recipe

Ingredients
    1/3 c. shortening
    1/3 c. sugar
    1 beaten egg
    1 1/4 c. milk
    1 c. flour
    1/2 tsp. salt
    4 tsp. baking powder
    1 c. corn meal
Preparation
    Cream shortening and sugar; add egg and milk.
    Add flour sifted with salt and baking powder.
    Add corn meal, stirring only enough to mix.
    Fill greased muffin pans two-thirds full; bake in hot oven (425\u00b0) for 25 minutes.
    Makes 1 dozen.
    May use nonstick cooking spray (Pam) to grease muffin tin, if preferred.
