Crown Jewel Patties - cooking recipe

Ingredients
    1 egg
    1/4 c. mayonnaise
    1/2 c. finely chopped onion
    2 Tbsp. vegetable oil
    1/4 tsp. salt
    1/8 tsp. pepper
    1 1/2 c. mashed, cooked carrots
    3 c. soft bread crumbs
    2 c. crushed cornflakes
Preparation
    In a mixing bowl, beat egg.
    Add mayonnaise, onion, oil, salt, pepper and carrots; mix well.
    Add the bread crumbs and mix thoroughly (if mixture is too wet to handle, add more crumbs). Shape into 10 to 12 patties; coat with cornflakes.
    Place on a greased baking sheet.
    Bake at 375\u00b0 for 25 minutes.
    Makes 5 to 6 servings.
