2 1/4 c. flour
4 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. ground ginger
1/2 tsp. salt
1/4 c. packed brown sugar
1 c. canned pumpkin
2 c. milk
4 eggs, separated
1/4 c. butter, melted
Preparation

In a large bowl, sift together the flour, baking powder, spices, salt and sugar.
In a medium bowl, combine the pumpkin, milk, egg yolks and melted butter and mix well.
Make a well in dry ingredients; add the pumpkin mixture and stir until combined. In a medium bowl, beat the egg whites until soft peaks form.
Fold them gently into the batter just until blended.
Cook the waffles in a preheated waffle iron according to manufacturer's directions.
