Pumpkin Or Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
1 c. vegetable oil
2 c. grated, peeled raw pumpkin or zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 c. chopped pecans
Preparation

Beat eggs until light and foamy.
Add the sugar, oil, pumpkin or zucchini and vanilla and mix lightly, but well.
Combine flour, salt, soda, baking powder and cinnamon and add to the egg-pumpkin or zucchini mixture.
Stir until well blended; add nuts and pour into two 9 x 5 x 3-inch loaf pans that have been greased and floured.
Bake at 350\u00b0 for 1 hour.
Cool on rack.
Freezes very well.
