Nova Scotia Fish Chowder - cooking recipe
Ingredients

2 lb. halibut or cod fillets
2 c. diced potatoes
1 qt. milk
8 soda crackers, crushed
2 Tbsp. chopped parsley
1/8 tsp. pepper
1/4 lb. fat salt pork, diced
1 medium onion
2 c. water
2/3 c. evaporated milk
3 Tbsp. butter
2 tsp. salt
Preparation

Cut fish into bite size chunks.
Saute the salt pork until it is a delicate brown.
Save the scraps for garnish.
Saute the onion until tender.
Add the potatoes and water and simmer until the potatoes are just cooked, then add the fish and simmer 5 minutes.
Combine the remaining ingredients and heat, but don't boil.
Add this to the fish mixture and serve piping hot, garnished with the pork scraps.
