Mansion Tortilla Soup - cooking recipe

Ingredients
    2 chicken breasts
    1 Tbsp. corn oil
    1 Tbsp. chopped garlic
    1/2 c. chopped onions
    3/4 c. peeled, seeded and chopped tomatoes
    8 c. chicken broth (may have to supplement)
    white or black pepper to taste
    1 tsp. cumin
    1 can whole kernel corn
    1 can pinto beans
    1 pkg. corn tortillas, cut in julienne strips and softened in corn oil
    grated cheese
    diced avocado
Preparation
    Cook chicken breasts until well done.
    Chop and reserve meat and stock.
    In 1 tablespoon corn oil, saute garlic, onions and tomatoes for 5 minutes (do this in a large heavy pan).
    Add beans and corn.
    Simmer until heated through, then add chicken broth, pepper and cumin.
    When this has heated through, add the chopped chicken.
