Spinach Pudding - cooking recipe

Ingredients
    2 pkg. (10 oz. each) frozen chopped spinach, cooked and drained
    2 c. cottage cheese
    1 tsp. salt
    1/3 c. grated Parmesan cheese
    2 eggs
    Parmesan cheese
Preparation
    Make an \"X\" cut in each package of spinach.
    Place both packages on a plate and microwave on 100% power for 8 to 9 minutes, until thawed.
    (Times may vary, depending on microwave oven size and power.)
    Drain well.
    Mix together spinach, cottage cheese, salt, Parmesan cheese and eggs until well blended.
    Pour into a greased 1 1/2-quart casserole dish.
    Microwave, uncovered, on 100% power for approximately 10 minutes.
    Sprinkle with a little additional Parmesan cheese and serve.
