Apricot-Lamb Kabobs - cooking recipe

Ingredients
    3/4 c. vegetable oil
    2 Tbsp. lemon juice
    1 Tbsp. honey
    1 tsp. curry powder
    1 tsp. salt
    1 clove garlic, minced
    1 lb. lean leg of lamb, cut in 1 1/2-inch cubes
    1 1/4 c. (8 oz.) dried apricots
    1 green pepper, cut in 1 1/2-inch squares, parboiled
    12 pieces celery, cut in 2-inch pieces (parboiled)
    2 onions, quartered
Preparation
    Blend together oil, lemon juice, honey, curry powder, salt and garlic. (Reserve some marinade for basting.)
    Add lamb.
    Cover and chill for 2 hours.
    Remove lamb from marinade and discard juices.
