Veal Scallopine - cooking recipe

Ingredients
    2 Tbsp. butter
    1 clove garlic
    1/2 c. sliced mushrooms
    1 tsp. salt
    dash of pepper
    1 tsp. dry mustard
    1 1/2 lb. veal, sliced thin and cut into 4-inch squares
    1 c. tomato juice
Preparation
    Heat electric frying pan to 350\u00b0.
    Add butter, saute garlic and mushrooms lightly.
    Remove.
    Mix flour, salt, pepper and dry mustard together.
    Dip meat into mixture.
    Brown veal in hot butter.
    Add tomato juice.
    Cover and cook 20 to 25 minutes at 225\u00b0.
    Add sauteed mushrooms to meat.
    Cover and simmer at 225\u00b0 for 5 to 6 minutes.
    Garnish with parsley.
    Yields 4 to 6 servings.
