Apricot Delight - cooking recipe
Ingredients

2 (3 oz.) pkg. apricot gelatin
2 c. boiling water
1 c. miniature marshmallows
1 (20 oz.) can crushed pineapple
2 c. cold water
2 bananas, finely chopped
1 c. chopped pecans
1 egg
2 Tbsp. flour
1/2 c. sugar
2 Tbsp. butter
3 oz. cream cheese, softened
1 envelope whipped topping mix
Preparation

Dissolve gelatin in boiling water in bowl.
Add marshmallows, stirring until almost melted.
Drain pineapple, reserving 1/2 cup juice.
Add pineapple, cold water, bananas and pecans to gelatin; mix well.
Pour into a 9 x 13-inch glass dish.
Chill until set. Combine reserved juice, egg, flour and sugar in saucepan; mix well.
Cook until thickened, stirring constantly.
Stir in butter and cream cheese until melted.
Chill completely.
Prepare whipped topping using package directions.
Fold into cream cheese mixture.
Spread over gelatin.
Chill for several hours.
Yield: 12 servings.
