Homemade Manicotti - cooking recipe

2 Tbsp. oil
2 c. sifted flour
1 1/2 c. water
1/2 c. milk
6 eggs
1 tsp. salt
Preparation

Combine all ingredients; let stand 1 hour at room temperature. Using a 6-inch nonstick saute pan, heat scant teaspoon oil.
Wipe with paper towel to coat pan evenly.
Spread 1 tablespoon batter over pan; tilt to cover surface and cook until dry, not brown.
Do not turn; flip onto clean dish towel to cool.
Do not stack.
When finished making crepes, mix together the filling.
