Ingredients

2 c. zucchini, unpared, grated
1/3 c. Bisquick mix
salt and pepper to taste
2 eggs, slightly beaten
1/4 c. Parmesan cheese
Preparation

Mix ingredients until blended.
Treat griddle with margarine. Ladle about 2 tablespoons mixture for each cake on greased griddle. Cook slowly until browned lightly on both sides.
