Creole Squash - cooking recipe

Ingredients
    2 1/2 lb. yellow or zucchini or eggplant
    3 Tbsp. butter
    1/4 tsp. red pepper
    3 Tbsp. flour
    1 medium onion, chopped
    3 large fresh tomatoes, chopped
    1 tsp. salt
    1/4 c. fresh minced basil or 1 tsp. dried
    bread crumbs and Parmesan cheese
Preparation
    Cook squash. Drain well. In heavy skillet, melt butter.
    Add flour and blend.
    Add onion, green pepper, tomatoes and seasonings.
    Cook 5 minutes.
    Place drained squash in greased shallow casserole.
    Pour sauce over this. Top with crumbs and cheese.
    Bake at 350\u00b0 for 30 minutes. Serves 10 to 12 generously.
