Duck Ala Orange - cooking recipe

Ingredients
    1 duck
    1 c. frozen orange juice (undiluted)
    orange peel, grated
    honey
    orange slices
    cooked wild rice
    asparagus, cooked
Preparation
    Wash duck and remove some of excess fat.
    Pat dry.
    Put duck in roasting pan with rack underneath.
    Set oven to 500\u00b0. Prick duck with fork around breast and legs.
    Put in oven for 5 to 10 minutes and hear crackling.
    Mix frozen orange juice, grated orange peel and honey to taste.
    Remove duck and drain fat; return to oven for more crackling and again drain fat.
    Reduce oven to 350\u00b0.
    Baste duck with orange/honey mixture with pastry brush. Cover and roast at 350\u00b0 until done.
    Repeat orange sauce over duck; duck can also be stuffed.
