Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    1 c. oil
    2 c. sugar
    2 c. shredded zucchini
    2 c. flour
    1/4 tsp. baking powder
    2 tsp. baking soda
    1 tsp. salt
    2 tsp. cinnamon
    2 tsp. vanilla
    1/2 c. nuts (optional)
Preparation
    Sift dry ingredients; add oil, zucchini, eggs and vanilla, then add nuts.
    Grease loaf pans.
    Makes 2 loaves.
    Bake at 325\u00b0 for 1 hour or until toothpick comes out clean.
